Breakfast
Mango Chia Seed Overnight Oats
  • 2 cups of coconut milk

  • ½ cup of chia seeds

  • ½ tsp vanilla extract

  • ¼ cup agave

  • ¼ tsp cinnamon powder

  • 1 tbsp of chopped mango for garnish 

  1. Place  ingredients in blender for 1 - 2 minutes

  2. Whisk in Chia Seeds

  3. Pour Mixture in a mason jar or glass container and let sit in refrigerator for at least 4 hours

 
Lunch
Kale Mason Jar Salad 
  • 1 bunch of washed Kale(ribs removed)

  • 2 medium tomatoes (chopped)

  • ¼ cup of Kalamata olives

  • ½ cup English cucumbers (diced)

  • ½ cup chopped red onion

  • ¼ cup feta cheese (reduced fat Athenos 

  • ¼ cup parsley

  • 3 tbsp olive oil

  • Juice of 1 lemon

  • ½ tsp black pepper and salt for taste

  • 1 tbsp red wine vinegar

  • ½ cup Shredded carrots

  • 1 tbsp basil,thyme,oregano dry seasoning

1.  A Large bowl mix all ingredients and let sit in fridge till ready to serve.

2. Grab two cups of the salad and place in a mason jar.

 
 
Dinner
Salmon Cakes 
.
  • 2 cans of pink salmon (drain and remove bones and excess water

  • 3 large egg whites

  • ½ cup onions chopped

  • ½ packet ranch dressing powder mix

  • 1 tbsp parsley

  • 1 tbsp chives

  • 1 tbsp spicy mustard

  • 1 garlic clove peeled and minced

  • ½ juice of fresh lemon

  • ½ tsp black pepper

 

1.Preheat oven 400 F

2. In a large bowl combine salmon and ingredients.  Refrigerate plastic wrapped bowl for 30 minutes.

3. Mix and make small patties with your hand about 2 -3 inches each

4. Bake for 10-12 minutes

5. Garnish with chives

Snack
Mango Salsa 
  • 1 mango peeled diced

  • 1 tbsp finely chopped jalapeno

  • 1/3 cup of red onion (diced)

  • 1 tbsp lime juice

  • 1/3 cup of roughly chopped cilantro leaves

  • ½ tsp Salt and pepper

 

 

1.Combine ingredients in a bowl and season with salt and pepper for taste.
